Prep the Turkey

Pat turkey dry, place turkey breast-side up, on cutting board. Carefully cut turkey breast in half lengthwise, straight through breastbone, or cut out backbone.

Grill the Turkey

Smoke turkey skin side up, covered, until meat around drumsticks pulls back and thermometer inserted in the thickest part registers 145°F, about 2 hours.

Mop, Flip, Mop

Mop with Rodney's Sauce, flip turkey, mop again. Break open  rib meat to soak in sauce. Continue to cook for another 30-45 minutes, until thermometer registers 155°F.

Scott's  Smoked Turkey

Scott swears by his BGE, but his turkey can cook in a kettle grill or smoker at 225° or roasted in the oven at 325° until turkey reaches 155°F.  - Food & Wine
