We’ve been perfecting our barbeque in Charleston for decades. It is smoked old-school artisan style in a closed pit 14-hour process. The meat is cooked at low temperatures and slow-smoked to ensure a thick smoke ring with tasty “bark” and tender texture that’s the sign of real “barbeque.”
Our sauces are Original (light tomato), Carolina Sunshine (mustard), Beast from the East (vinegar) for those who are looking for traditional sauces.
We also have Blueberry Chipotle (original creation, base is light tomato but with a very different flavor profile from the blueberries), Bourbon PeachPecan (original creation, still with vinegar, but sweeter with real peaches, bourbon, and pecans), Cranberry Molasses (original creation, vinegar-based similar to original, but tarter like the cranberries in it), and we also make an original Habanero Watermelon hot sauce.
NOTE: Open Saturdays from 8:00 a.m. – 2:00 p.m. during the Farmer’s Market season, which runs April – December.
I like the variety of recipes and explanations of origins/regions. I grew up in Georgetown, SC, and it’s great to have reminders of our wonderful region. I’d say, if you love BBQ, you need to have this cookbook! Thank you for all your efforts in making this book available.
