SC BBQ Sauce Recipes

In South Carolina, barbecue sauce isn’t one thing. The Midlands favor mustard, the Pee Dee leans vinegar-pepper, and some SC BBQ restaurants use thin mops designed for whole hog. If you want authentic SC flavor, start with a mustard or vinegar-based sauce, then branch out.
