After running the Noisy Oyster for 27 years, restaurateur Wade Boals stands ready to do something new: True Q BBQ.

Boals closed down the Charleston Market restaurant a while ago. The Rivers Avenue location closed at the end of August 2019. That location has reopened in under the name True Q BBQ. The restaurant serves smoked meats, craft beer, and an array of other side items.

“Noisy Oyster was tired and worn out, it was time to refresh what we have,” Boals said. True Q’s atmosphere is simple. Boals said they’re going for a minimalist, clean feel.  On the walls, you will find photos of old-school pitmasters at work.

The menu includes “competitively-priced” smoked meats — pork belly, brisket, made-in-house sausage, chicken, and more. True Q BBQ smokes all meats onsite within a screened-in patio. “As customers arrive, they’ll be able to look through the smokehouse as soon as they pull up,” Boals said.

True Q BBQ offers “three or four different tacos,” wraps, salads, and a number of “fun apps for communal eating.” The menu will actually be very similar to another of Boals’ restaurants, Saltwater Cowboys on Shem Creek in Mount Pleasant. In fact, Boals said they’re trying to co-brand the sister restaurants. He said he is hoping to turn True Q into “‘Saltwater Cowboys’ noisy kin.”

As a result, you will find lots of local beer on tap and a high-end bourbon menu.  Plenty of TVs for viewing sports, and live entertainment three nights a week from local musicians round out the offerings.

While Boals is certainly pursuing a vision that he believes will appeal to a wide demographic. However, he has a deeper attachment to barbecue.

Boals says for the past few years he’s been researching and creating sauces and rubs for the restaurant. He has trained a couple of pit masters to man the smoking operation at True Q, which is not to be confused with either True BBQ in Columbia or yet another, different True BBQ in Myrtle Beach.)

The focus at True Q will be on meat, of course, but Boals said they’ll still have some seafood, including Tommy Edwards’ local shrimp served fried on a sandwich, grilled on a salad, and over grits
