“Everything on [Chef Rushing’s] menu is amazing,” declares Kardea Brown, Food Network Host, about The Briny Swine, a unique culinary gem nestled in the heart of Edisto Beach, SC.

In a state revered for its BBQ, this establishment stands out, not just for its smoked meats but for a daring fusion with seafood, creating a dining experience that’s as tantalizing as it is unique.

Situated at the confluence of Big Bay Creek and the South Edisto River, The Briny Swine offers more than just food; it offers an experience. As noted in an OnlyInYourState.com article, “these views are second to none,” providing a backdrop that enhances every bite with the beauty of Edisto Beach.

The Birth of The Briny Swine

In the world of South Carolina BBQ, where tradition reigns supreme, The Briny Swine emerges as a delightful anomaly. Conceived by Executive Chef/Owner Brandon Rushing and Co-owner Katherine Rushing, this establishment is a tribute to “two Southern celebrations and pastimes, oyster roasts and pig pickings,” as described on their official website.

This venture follows the success of their first concept, Ella & Ollie’s, a testament to the Rushings’ prowess in the culinary world.

At The Briny Swine, the menu is a vibrant tapestry of Southern flavors, weaving together the best of land and sea. It’s a place where the traditional BBQ meets the freshness of the ocean, creating a culinary narrative that’s distinctly Southern. The dinner menu is a testament to this fusion.

"The Big Stupid" at Briny Swine. Mac and cheese, brisket, pulled pork, chipotle mustard bbq, crispy onions, brioche bun.

Starters like crispy Brussels sprouts with country ham and hot sorghum set the stage, followed by an array of smoked wings, each brined, slow-smoked, and flash-fried to perfection.

The combo platters are a highlight, offering choices like succulent pulled pork, tender brisket, fall-off-the-bone ribs, and dreamy smoked wings, all accompanied by classic Southern sides such as creamy mac & cheese, collard greens, coleslaw, and potato salad.

Seafood lovers will revel in the daily selection of oysters, sourced locally and from the Northwestern beds of Chef Rushing’s childhood.

The Lobster Roll, with poached lobster and lemon oil, and the Brisket Melt, featuring pimento cheese and bacon jam on Hawaiian bread, are not just meals but experiences in themselves.

The menu also caters to lighter appetites and sharing with dishes like the Smoky Pimento Cheese & Pork Rinds, a house-made three cheese blend served with crispy pork rinds, and the BBQ Cobb Salad, a delightful mix of baby greens, pork belly, and other fresh ingredients.

And for those with a sweet tooth, the dessert offerings – coconut cake, banana pudding, and chocolate pecan pie – provide a perfect endnote to the meal.

In every dish, The Briny Swine’s commitment to quality and flavor shines through, making it a culinary destination that celebrates the heart and soul of Southern cooking.

A Deep Dive into the Culinary Experience

In a YouTube interview with owner/chef Rushing, the passion for local sourcing and quality is evident.

“Briny Swine Smokehouse sources excellent local oysters from a company called Low Country Oyster Company,” highlighting their commitment to local produce. Moreover, Edisto Beach is described as “an extremely unique place, a really small town with a great community and no stoplights,” underscoring the restaurant’s deep connection with its locale.

A Blend of Flavors and Community

The Briny Swine is more than a restaurant; it’s a celebration of community and flavor.

The fusion of traditional BBQ with innovative seafood dishes creates a menu that’s both familiar and adventurous. The restaurant’s vision, “to provide a more casual dining experience,” as mentioned in the YouTube interview, resonates in every aspect, from the laid-back ambiance to the meticulously crafted dishes.

What Folks are Saying

TripAdvisor Review

Among the many TripAdvisor Reviews, Don H. wasn’t satisfied with only one visit, so he went twice:

We ate here twice during our weeklong stay on Edisto.

The brisket was so tender and juicy, the pulled pork was amazing and the sauce was just right. We ordered the loaded baked potato and baked beans as sides which were also great.

But, what really stands out was the peach cobbler. We ordered it twice and it did not disappoint.

The service was friendly and welcoming, and the prices were very reasonable. This is definitely a must-eat place while visiting Edisto!

Yelp Review

Over on Yelp, LC dropped in to Briny Swine during a visit to the beach:

I had to get in my BBQ fix while visiting Edisto Beach and Briny Swine hit the spot!

I ordered the pulled pork sandwich with mac and cheese and coleslaw on the side. The pork was tender and juicy, the bun was lightly toasted and the slaw was the perfect balance of tangy and creamy.

The mac and cheese was creamy with a crispy top.

The staff was friendly and welcoming. I enjoyed the laid-back, family-friendly atmosphere of the restaurant.

I highly recommend giving Briny Swine a try!
